2021 Spring Farm Shiraz Cabernet
The 2021 Spring Farm Shiraz Cabernet is a combination of 70% Shiraz, 30% Cabernet Sauvignon. Medium bodied Shiraz with true strength of flavour and richness provide the base for this wine. Characteristic Cabernet flavours of blackcurrants and dark chocolate are highlighted with touches of mint-cream. The palate is elegantly structured to carry all the flavours right the end.

Growing Conditions
A cool dry winter and hot start to summer had us bracing for another difficult vintage. Thankfully, we received some welcome rain at the start of February which helped to keep the vines fresh. Cool temperatures during February and March were perfect for vines to ripen exceptional flavours.
Vineyard
This blend was chosen for its ability to grow well in Clare, with each variety complementing the other. Fruit is grown on our Yertabulti and Provis vineyards, situated at the northern end of the Clare Valley, this is the perfect climate for maturing our premium red grapes.
